Loin chops are like mini T-bone steaks from the waist of the lamb.
One side has the lamb loin, and on the other side of the bone is the fillet.
These chops are great for grilling and roasting.
Slather it in olive oil, rosemary, mint, thyme, salt and pepper and you got yourself a mouth watering meal!
Cuts from the loin are best cooked with dry heat from the oven or grill.
A little lemon juice will help cut and balance the rich fatty taste.
