Herb Roasted Chicken

This oven roasted chicken recipe is a real time saver on a busy weeknight. Simply slather it in butter, herbs, and spices...pop it in the oven...and come back when its done and ready to eat!

Ingredients
- (1) Chicken - Whole Medium 3-4Lbs
- (To taste) Salt
- (To taste) Pepper
- (To taste) Garlic Powder
- (To taste) Smoked Paprika
- (To taste) Dry Oregano
- (To Taste) Fresh Thyme
- (To taste) Ghee or Butter
- (Enough to cover the bottom of your cooking pan) Root veggies of your choice
Directions
- Pre-heat oven to 350
- Slather chicken in ghee or butter, on top of skin and under the skin.
- Cover with seasonings
- Score the skin
- Chop root veggies like potatoes, carrots, and onions and place on bottom of cooking pan.
- Place chicken on top of veggies.
- Cook chicken until internal temp of 165 degrees F.
- If you want super crispy skin, hit it with the broiler for a few minutes at the end.
