Herb Roasted Chicken
This oven roasted chicken recipe is a real time saver on a busy weeknight. Simply slather it in butter, herbs, and spices...pop it in the oven...and come back when its done and ready to eat!

Ingredients

  • (1) Chicken - Whole Medium 3-4Lbs
  • (To taste) Salt
  • (To taste) Pepper
  • (To taste) Garlic Powder
  • (To taste) Smoked Paprika
  • (To taste) Dry Oregano
  • (To Taste) Fresh Thyme
  • (To taste) Ghee or Butter
  • (Enough to cover the bottom of your cooking pan) Root veggies of your choice

Directions

  1. Pre-heat oven to 350
  2. Slather chicken in ghee or butter, on top of skin and under the skin.
  3. Cover with seasonings
  4. Score the skin
  5. Chop root veggies like potatoes, carrots, and onions and place on bottom of cooking pan.
  6. Place chicken on top of veggies.
  7. Cook chicken until internal temp of 165 degrees F.
  8. If you want super crispy skin, hit it with the broiler for a few minutes at the end.
